Cannibalism

The question is zoological and I am not sure where to ask it, but I am very curious. There are famous stories about man-eating tigers, man-eating lions and the like. I have come across the claim that such a predator usually does not feed on humans, but once it tries human flesh it immediately "gets used to" it and begins to hunt people deliberately. How true is this and what causes it?
